zucchini gratin


Ingredients:
2 Zucchini
2 cups Milk
Parmesan
Extra virgin olive oil (EVOO)
​Salt
Pepper
Fresh basil
Fresh cilantro
Total cooking time:
30 mins


Recipe:
  1. Slice zucchini and layer in a spiral in a ceramic pot
  2. Pour enough milk to barely cover the top of the zucchini and place on stove at low to medium heat
  3. Cook the zucchini until tender, and then remove from heat
  4. Grate parmesan generously, covering the zucchini and then place in a oven (toaster oven works fine too) on broil for 10 mins or until the top of the gratin is golden brown
  5. To plate, add EVOO, salt and pepper to taste, as well as chopped basil and cilantro
