Ingredients:
2 Zucchini
2 cups Milk
Parmesan
Extra virgin olive oil (EVOO)
Salt
Pepper
Fresh basil
Fresh cilantro

- Slice zucchini and layer in a spiral in a ceramic pot
- Pour enough milk to barely cover the top of the zucchini and place on stove at low to medium heat
- Cook the zucchini until tender, and then remove from heat
- Grate parmesan generously, covering the zucchini and then place in a oven (toaster oven works fine too) on broil for 10 mins or until the top of the gratin is golden brown
- To plate, add EVOO, salt and pepper to taste, as well as chopped basil and cilantro
