Ingredients:
1 cup Rice
2 Zucchini
1 Yellow bell pepper
¼ cup peanuts
½ cup creamy peanut butter
2-3 Tbsp soy sauce
1-2 Tbsp maple syrup
2-3 Tbsp lime juice
¼ cup water
Extra virgin olive oil (EVOO)
Crushed red pepper
Salt

- In a medium mixing bowl add peanut butter, soy sauce, maple syrup, lime juice, and crushed red pepper; whisk to combine
- Add water a little at a time until a thick but smooth sauce is achieved
- Thoroughly wash the rice around three times
- Using a rice cooker, pour two times water for each cup of rice
- While the rice is cooking, in a medium skillet sautée julienne sliced pepper and zucchini in EVOO over medium-high heat
- As the vegetables sautée, add in salt and crushed red pepper with splashes of soy sauce and preferred hot sauce
- Once the vegetables are fully cooked and the soy sauce is bubbling, turn down the heat and begin to add in the peanut sauce
- Plate the vegetable stir fry with the cooked rice, crushed peanuts, dollops of peanut sauce, lime zest, and hot sauce and soy sauce to taste
