4 Granny Smith Apples
2 oz dried Hibiscus Petals
3 tablespoons Almonds
1 cup White Sugar
⅓ cup Powdered Sugar
1 Orange
1 Clove
1 Star Anise
1 pinch Ground Nutmeg

4 cups Water
2 oz Butter
4 slices of English Muffin
⅓ cup Mint Leaves
1 scoop of any Ice Cream

- To make the candied almonds, take a small pan and fill with a half cup water, the white sugar, and ground cinnamon.
- Cook over medium-high heat, and once evenly mixed add the almonds. Cook until the almonds are completely coated by the sugar mixture and the water has completely evaporated, around 15 mins. This will leave a sticky coating around the almonds, but continue to cook until the almonds seem dry. Place on wax paper and let cool.
- While the almonds are cooking, take another medium pan and place the powdered sugar on the bottom followed by the dried hibiscus petals and peeled orange, clove, star anise, and nutmeg.
- Cover with the remaining water and set the pan over low heat so the ingredients are gently simmering and infusing for 40 mins. Make sure to let the infusion to naturally cool after this time.
- While the mixture is infusing, core the apples and score the skins lightly around the middle so the apples do not burst while being baked. Pre-heat the oven to 375ºF.
- Spread the butter on the bottom of a pan and in the apples. Ladle over the hibiscus infusion with the petals, orange, and other ingredients as well. Make sure the infusion is present in and all around the apples. The infusion to reach less than an inch in height of the dish.
- Bake the apples for 30 - 40 mins and make sure to ladle the surrounding hibiscus infusion over the apples intermittently.
- Once the apples are baked, slice the apples and place over a toasted english muffin with crushed candied almonds, some of the hibiscus infusion, some mint leaves, and a scoop of ice cream.
