1 cup coconut milk
Juice of ½ lemon
Sugar (or other sweetener), to taste
(Optional) 1 cup toasted pecans or walnuts
(Optional) ½ cup toasted coconu

- Blend ingredients together, add sugar to taste.
- Place in an air-tight container and freezer for 2 – 3 hours.
- Serve slightly thawed (should be able to scoop easily) along with leftover pineapple or any tropical fruit topping.
- (Coconut milk is used for this tropical sorbet, but for any sorbets with other fruits like strawberries and blueberries, coconut milk is not needed, you simply need to blend the fruit with lemon juice and sugar).
